In the Ecuadorian Andes, surrounded by breathtaking scenery and genuine flavors, you’ll find “Azuay… Pure Pleasure!” This culinary tourism route celebrates the profound knowledge of local producers, cooks, and artisans who pay homage to the land with their masterful creations. Spearheaded by the Italo-Latin American International Organization (IILA) and supported by Italian Cooperation, this project honors Andean identity through its flavors, warm hospitality, and the cherished tradition of gathering around the table.

Otavalo Market

At the heart of the Kichwa culture, Otavalo's 24 de Mayo Market invites you to savor the local identity through iconic dishes. Think hornado (roasted pork), fritada (fried pork) served with potato tortillas and hominy, and the popular Otavalo-style chaulafán (fried rice).

Cuenca Market

Cuenca, an Andean heritage gem, also captivates with its cuisine. At the 10 de Agosto Market, you'll discover the taste of history with traditional preparations like mote pillo (hominy with eggs and cheese), mote sucio (hominy with pork cracklings), corn tortillas, and the emblematic hornado.

Archidona Market

Experience the flavors of the Amazon at Archidona's Plaza de Comidas Típicas (Traditional Food Court). Here, ancestral cuisine comes alive with dishes such as maito de pescado (fish wrapped in leaves) served with hearts of palm or yuca, cacao blanco (white cacao, also known as patas muyu), chontacuros (palm worms), and traditional drinks like chicha de chonta (peach palm ferment) or guayusa.

At Portoviejo's Mercado Plaza Central, the Manabí flavor expresses itself with power and tradition. Indulge in viche de pescado (fish and peanut soup), ceviches made with conch, fish, or shrimp, hearty broths and stews of free-range chicken, and plantain-based dishes like bolones (stuffed plantain balls), tigrillos (mashed plantain with cheese and egg), corviches (plantain fritters), and the unique hornado de cabeza de chancho (roasted pig's head) or mondongo (tripe stew).
